Ingredients

  • 1 pound  assorted dry beans (2-1/2 cups)
  • 4-1/2 cups  cold water
  • 1 tablespoon  instant beef bouillon granules
  • Dash  ground cloves
  • 4   bay leaves
  • 1 5-pound  domestic duckling or 1 3- to 3-1/2-pound broiler-fryer chicken, cut up (skinned, if desired)
  • 1 to 2 tablespoons  cooking oil
  • 3/4 pound  boneless lean pork, cut into bite-size pieces
  • 3/4 pound  boneless lean lamb or beef, cut into bite-size pieces
  • 2   large onions, cut into thin wedges
  • 2   medium carrots, sliced (1 cup)
  • 3 cloves  garlic, minced
  • 1-1/4 cups  dry white wine
  • 1 14-1/2-ounce can  tomatoes, undrained and cut up
  • 2 teaspoons  dried thyme, crushed
  • 1 teaspoon  pepper
  • 3/4 cup  dry bread crumbs
  • 3 tablespoons  margarine or butter, melted
  • 2 tablespoons  snipped parsley
