Pineapple Zucchini Bread

Ingredients

  • 3 cups  all-purpose flour
  • 1 tablespoon  ground cinnamon
  • 2 teaspoons  baking soda
  • 1 teaspoon  kosher salt or 1/2 teaspoon salt
  • 1/2 teaspoon  baking powder
  • 2 cups  finely shredded, unpeeled zucchini
  • 3   eggs, lightly beaten
  • 1 8-ounce can  crushed pineapple (juice pack), drained
  • 1-1/2 cups  sugar
  • 3/4 cup  cooking oil
  • 2 teaspoons  vanilla
  • 1 cup  chopped walnuts or pecans, toasted
  •   Cream cheese or butter, softened (optional)
