Maple-smoked Chicken

Ingredients

  • 6 to 8  maple wood chunks
  • 6   whole chicken legs (thigh-drumstick portion)
  • 3/4 cup  ketchup
  • 1/3 cup  maple syrup
  • 2 Tbsp.  cider vinegar
  • 1 Tbsp.  bottled steak sauce
  • 1 Tbsp.  yellow mustard or Dijon-style mustard
  • 1/2 tsp.  ground cinnamon
  • 1/4 tsp.  ground allspice
  • 1/4 tsp.  black pepper
  • Several dashes  bottled hot pepper sauce
  • Dash  ground cloves (optional)
  •   tomato slices (optional)
