Calf's Liver With Pancetta, Sage, And Mashed Potatoes

Ingredients

  •   Extra-virgin olive oil
  • 1/2 bunch  fresh sage sprigs (about 8 sprigs), leaves only
  • 8   slices pancetta, thinly sliced
  • 1 pound  calf's liver, sliced into 4 thin pieces
  •   Kosher salt and freshly ground black pepper
  • 1/2 cup  beef broth
  • 1/2   stick cold unsalted butter, cut into cubes

Description

Add A 3-count Of Olive Oil (about 3 Tablespoons) To A Small Saucepan And Heat Over Medium-low Heat. Fry Sage Leaves For 2 To 3 Minutes Until Crispy. Remove With A Slotted Spoon And Drain On Paper Towels. Set Aside.
