Orange Salmon With Noodles

Ingredients

  • 1-1/4 pounds  fresh or frozen skinless salmon fillet, about 1 inch thick
  • 1/4 cup  olive oil
  • 1/4 cup  balsamic vinegar
  • 1 tablespoon  cracked black pepper
  • 1/2 pound  buckwheat (soba) or whole wheat noodles
  • 1/3 cup  orange juice
  • 2   oranges, peeled, sectioned, and chopped
  • 1 clove  garlic, minced
  • 1/4 cup  chopped red onion and/or sliced green onion
  • 2 teaspoons  anise seed, crushed
  •   Fresh fennel leaves (optional)

Description

Japanese Buckwheat (soba) Noodles, Found With The Asian Foods In Grocery Stores, Add A Subtle Earthy Flavor. Substitute Whole Wheat Noodles If You Wish.
