Roasted Duck With Farro Stuffing

Ingredients

  • 2 4- to 4-1/2-pound  fresh or frozen domestic ducks
  •   Kosher, sea, or regular salt
  •   pepper
  • 1-1/4 cups  farro (spelt)
  •   Cold water
  • 1/8 teaspoon  salt
  • 3   thick slices bacon, chopped
  • 2 medium  onions, chopped finely
  • 4 cloves  garlic, minced
  • 2 tablespoons  snipped parsley
  • 1 teaspoon  snipped fresh thyme
  • 2 tablespoons  extra virgin olive oil
  • 1 large or 2 medium  fresh cepes or porcini mushrooms, finely chopped, or 1-1/2-ounces dried porcini mushrooms, reconstituted
  • 4   eggs, lightly beaten (optional)
