Upside-down Caramelized Apple Pie


  •   Pastry for Single-Crust Pie (see Recipe Center)
  • 1/3 cup  sugar
  • 4 teaspoons  cornstarch
  • 1 teaspoon  ground cinnamon
  • 1 teaspoon  finely shredded lemon peel
  • 1 tablespoon  lemon juice
  • 1/4 teaspoon  ground ginger
  • 6 to 8  apples, peeled, cored, and sliced (6 cups)
  • 1/4 cup  margarine
  • 1/3 cup  sugar
