Ingredients

  • 4   soft baguette rolls, split lengthwise (about 7 inches long)
  • 2 tablespoons  unsalted butter, softened
  • 1/2 cup  plus 1/4 teaspoon honey
  • 2 tablespoons  soy sauce
  • 1 tablespoon  very finely chopped fresh ginger
  • 1   scallion, white and green parts chopped
  • 3   garlic cloves, 2 very finely chopped
  •   Salt and freshly ground black pepper
  • 1/4 cup  cider vinegar
  • 1/2 cup  shredded carrots
  • 1/4 cup  mayonnaise
  • 1 tablespoon  sambal oelek or other Asian red chile sauce
  • 2   large, thick, skinless catfish fillets, halved lengthwise (about 10 ounces each)
  •   Vegetable oil, for brushing
  •   Thinly sliced cucumber and cilantro sprigs, for serving
