- 2 Tbsp. water
- 2 Tbsp. lemon juice or white wine vinegar
- 1-1/2 tsp. Garam Masala or 1 teaspoon curry powder, 1/4 teaspoon ground cumin and 1/4 teaspoon ground cinnamon or ground allspice
- 1/2 tsp. kosher salt or 1/4 teaspoon regular salt
- 2 Tbsp. olive oil
- 1 lb. round red potatoes, chopped
- 1 medium onion, coarsely chopped
- 1 medium zucchini, cut into thin bite-size strips
- 1 or 2 fresh jalapeno peppers (see note), seeded and finely chopped
- 3 cloves garlic, minced
- 2 tsp. minced fresh ginger
- 2 Tbsp. olive oil
- 6 oz. semisoft goat cheese (chevre) or feta cheese, crumbled
- 2 Tbsp. snipped fresh cilantro
- 2 Tbsp. snipped fresh mint
