Beef Rolls Bavarian

Ingredients

  • 6 to 8 slices  lean bacon
  • 3 pounds  beef top round steak, sliced 1/2 inch thick
  • 6 to 8 teaspoons  German-style mustard or other hot prepared mustard
  • 1/4 cup  finely chopped onion
  • 3 or 4 large  dill pickle spears, halved lengthwise
  • 2 cups  water
  • 1 cup  coarsley chopped celery
  • 1/4 cup  sliced leeks, white part only
  • 3 sprigs  fresh parsley
  • 1 teaspoon  salt
  • 1 tablespoon  finely chopped, peeled parsnip (optional)
  • 1 tablespoon  butter
  • 2 tablespoons  all-purpose flour

Description
