Ingredients

  • 1   packet (9 boards) regular or low-fat cinnamon graham crackers
  • 4 tablespoons  butter, melted
  • 2 tablespoons  honey
  •   Pinch salt
  •   Filling:
  • 1 package  (8 ounces) regular cream cheese, at room temperature
  • 1 package  (8 ounces) 1/3-less-fat cream cheese (Neufchatel), at room temperature
  • 2/3 cup  confectioners' sugar
  • 1 teaspoon  grated lemon rind
  • 2 tablespoons  fresh lemon juice
  • 2 large  egg whites
  •   Thin lemon slices, for garnish (optional)

If You Don't Have The Small Springform Pans, You Can Bake This Lemony Cheesecake Batter In An 8-inch Pan. Either Way, The Creamy Cheesecake Is Delicious With Fresh Fruit.
