Ingredients

  • 4 bell peppers, tops sliced off and reserved, ribs and seeds discarded
  • 3 tablespoons extra-virgin olive oil
  • Salt and pepper
  • 1/4 pound Canadian bacon, chopped
  • 3 cloves garlic, chopped
  • 1 teaspoon dried oregano
  • One 15-ounce can cannellini beans, rinsed
  • 2 tomatoes, chopped
  • 4 ounces mozzarella cheese, cut into cubes (about 1 cup)
  • 1/2 cup dry bread crumbs
