Ingredients

  • 4 large starchy potatoes, such as Idaho
  • Salt
  • 3 tablespoons vegetable oil
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, chopped
  • 4 scallions, chopped
  • One 1-pound sirloin steak, no more than 1/2 inch thick, trimmed and thinly sliced into pieces about 3 inches long
  • Freshly ground pepper
  • 2 tablespoons Worcestershire sauce
  • 2 poblano chile peppers (or red bell peppers, for less spiciness), seeded and thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 to 3 tablespoons fresh thyme, chopped
  • 1 lime, cut into wedges
  • 1/2 cup sour cream or reduced-fat sour cream
  • 1/4 to 1/2 cup milk, depending on how soft you like your mashers
  • One 10-ounce package shredded sharp cheddar cheese
