Bam Bam Shrimp

Ingredients

Note: You will need a deep fryer to prepare this dish.
  • Vegetable or other light oil, for frying
For the sauce:
  • 1/2 cup rice wine vinegar
  • 1/2 cup sugar
  • 1 tablespoon fish sauce
  • 2 tablespoons sherry
  • 2 cloves garlic, minced
  • 1/2 tablespoon dried crushed chili flakes
  • 4 tablespoon Sriracha hot sauce
  • 1 1/2 tablespoons cornstarch, dissolved in 3 tablespoons water
  • 1/2 cup mayonnaise
  • 1 lime, cut into wedges
For the shrimp:
  • 2 eggs, beaten
  • 1/4 cup milk
  • 1/4 cup rice flour
  • 1/4 cup cornstarch
  • 1/4 cup panko breadcrumbs
  • 1 pound medium shrimp, cleaned and deveined
