  • 2 pints cherry tomatoes or multi-colored baby heirloom tomatoes, halved or quartered
  • 1/2 small red onion, chopped
  • 1 cup shredded basil leaves
  • 2 cups baby arugula;
  • Parmigiano Reggiano cheese, for shaving
