Ingredients

  • 1 pound gnocchi
  • 1 tablespoon butter
  • 1 tablespoon extra virgin olive oil (EVOO)
  • 1 pound ground sirloin
  • 1 large onion, chopped
  • 2 cloves garlic, finely chopped
  • 3/4 cup white wine
  • 10 sage leaves, freshly torn and divided
  • 1 cup chicken stock
  • 1 cup blue cheese, such as Gorgonzola
For the salad:
  • 1/2 tablespoon Dijon mustard
  • Zest and juice of 1 lemon
  • 1/4-1/2 cup extra virgin olive oil (EVOO)
  • Salt and freshly ground black pepper
  • 1 large head escarole, cleaned thoroughly and chopped into bite-size pieces
