- 1 onion, chopped
- 1 large fennel bulb, quartered, cored and thinly sliced (reserve a handful of fronds, chopped)
- 3 cloves garlic, chopped
- 1 fresh or dried bay leaf
- Salt and freshly ground pepper
- 1/2 cup dry white wine
- 6 cups chicken broth
- 3 Idaho or Russet potatoes, peeled and thinly sliced (about 1 1/2 pounds)
- 1/2 cup fresh basil leaves, chopped
- A generous handful of flat leaf parsley, chopped
- Freshly grated Asiago or Grana Padano cheese, to pass at the table
- Crusty Italian bread, to pass at the table
