Garlicky Bbq Bacon Burgers With Spinach On Top And Smokycream Corn On The Cob

Ingredients

  • 1 cup heavy cream
  • 1 chipotle pepper in adobo sauce, minced to a paste
  • Zest and juice of 1 lime, divided
  • 3 tablespoons extra virgin olive oil (EVOO)
  • 8 slices bacon
  • 1 red onion, finely chopped
  • 2 tablespoons Worcestershire sauce (eyeball it)
  • 3 tablespoons dark brown sugar
  • 1 can tomato sauce (15 ounces)
  • 4 ears of corn on the cob, husked
  • Salt and black pepper
  • 2 pounds ground sirloin
  • 1 tablespoon cumin (a palmful)
  • 1 tablespoon chili powder (a palmful)
  • 2 tablespoons steak seasoning, such as McCormick brand Montreal Steak Seasoning (a couple of palmfuls)
  • 2 teaspoons ground coriander (2/3 palmful)
  • 2 cloves garlic, grated or finely chopped
  • 4 Kaiser rolls, split and toasted
  • 1 pound spinach, stemmed
  • 1/2 pound queso fresco, asadero cheese or other white, mild cheese, grated
  • 2 scallions, whites and greens, finely chopped
  • A handful of cilantro or flat leaf parsley leaves, finely chopped
