Pappardelle with Shrimp and Asparagus

Ingredients

PASTA
1 1/2 cups   all-purpose flour
1/2 cup semolina flour
3 large eggs
2 1/2 teaspoons salt

SAUCE
3 tablespoons extra-virgin olive oil
1 pound asparagus , trimmed and cut (on the diagonal) into 1/4-inch pieces
1 teaspoon salt
1/4 teaspoon white pepper
2 large shallots , minced
2 cloves garlic , minced
18 jumbo shrimp , peeled and de-veined (tail left on)
1/2 cup white wine
2 cups diced plum tomatoes (about 6 small tomatoes)
3 tablespoons chopped fresh Italian parsley
