Ingredients
- 6-9 chicken thighs skin-on (for flavour and moistness)
- ¼ of a fresh lemon or preserved lemon
- Kosher salt
- Fresh rosemary or thyme sprigs
- Olive preferably or other oil
- ¼ cup of chicken stock or white wine for deglazing later
- Any assortment of the following, as much as will cover bottom of a large roasting pan without crowding too much:
- 2 Large carrots cut in small spears
- 2 Large parsnips cut in small spears
- 1-2 regular or sweet potato peeled, cut in bite size pieces
- about ½ inch thick at most 1 Red pepper cut in chunks (like you would use on a skewer for BBQ)
- ½ -1 Large sweet onion cut in chunks (like you would use on a skewer for BBQ)
- ½ -1 Fennel (anise) bulb cut in chunks (like you would use on a skewer for BBQ)- Julie says no thanks to fennel!
