Dads One-pan Chicken And Roasted Veggies

Ingredients

  • 6-9 chicken thighs skin-on (for flavour and moistness)
  • ¼ of a fresh lemon or preserved lemon
  • Kosher salt
  • Fresh rosemary or thyme sprigs
  • Olive preferably or other oil
  • ¼ cup of chicken stock or white wine for deglazing later
  • Any assortment of the following, as much as will cover bottom of a large roasting pan without crowding too much:
  • 2 Large carrots cut in small spears
  • 2 Large parsnips cut in small spears
  • 1-2 regular or sweet potato peeled, cut in bite size pieces
  • about ½ inch thick at most 1 Red pepper cut in chunks (like you would use on a skewer for BBQ)
  • ½ -1 Large sweet onion cut in chunks (like you would use on a skewer for BBQ)
  • ½ -1 Fennel (anise) bulb cut in chunks (like you would use on a skewer for BBQ)- Julie says no thanks to fennel!
