Ingredients
- 2 chicken breasts, skinless and boneless
- 2 cloves garlic, crushed
- 1tbsp soy sauce
- 1tbsp fish sauce (nam pla)
- juice of 1 lime
- a pinch or two of turmeric
- 2 stalks lemongrass, roughly chopped
- grated zest of 1 lime large handful of coriander leaves (if you haven't got any, fresh basil is fine too)
- 500ml chicken stock (I used bouillon powder)
- double handful/75g noodles
- 2 spring onions, thickly sliced
- a walnut sized lump of ginger, grated
- 2 small red chillies, seeded and chopped (I only had dried chillies and I used more than 2 coz I like it hot!)
- groundnut oil
- 400ml tin coconut milk
