- 1 Rabbit portioned ie 4 lags 1 haunch
- 1 bouquet garni - freshly made up of garlic celery bay leaves and whatever fresh herbs you have to hand but especially thyme
- 4 medium tomatoes - quartered
- 2/3 Red onions - quartered
- 3 cloves garlic - unpeeled
- 1 chorizo ring - finely chopped
- olive oil
- 1 tin of cannellini beans - or equivalent ie flageolet - even kidney
- 300 mil red wine
- 700 mil chicken stock
- pinch dried chilli flakes
- Maldon salt and pepper to taste
- Cornflower for thickening
