3-4 lb Young chicken
4 quarts Water
2 Large lemons, halved, seeded
5 cloves Garlic, minced
One Medium size piece ginger root, peeled & sliced
1 tbsp Parsley
1 tsp Salt or to taste
1 tsp Greek seasoning
1 tsp Onion powder or small minced onion
1/4 tsp Black pepper
Curry sauce:
3 cups Lemon-ginger chicken broth
1 cup Milk
5 tbsp Flour
4 tbsp Butter
2 tsp Curry powder
1/2 tsp Paprika
Pineapple Jasmine Rice:
3 cups Pineapple juice (unsweetened)
2 cups Jasmine rice
1/4 cup Water
1 Chicken bouillon cube
1 Small piece ginger root, peeled and sliced.
