75g (3oz) unsalted butter
2 Leeks, finely chopped
100g (4oz) piece rindless smoked bacon, finely diced
225g (8oz) mixed mushrooms, sliced (such as shitake, chestnut, chantarelle and oyster)
about 2 litres (3 1/2 pints) vegetable stock
2 Onions, finely chopped
1 Heaped tsp fresh thyme leaves
1 Fresh bay leaf
450g (1lb) arborio rice (risotto)
175g (6oz) freshly grated Parmesan
175g (6oz) mascarpone cheese
4 tbsp Chopped fresh flat-leaf parsley
50g (2oz) plain flour
2 Eggs
100g (4oz) toasted dried breadcrumbs
4 tbsp Olive oil
Salt and freshly ground black pepper
Dressed bitter salad leaves, to serve
