Jambalaya Recipe

Ingredients

  • 1 lb. chicken tenders, or 2 chicken breasts (boneless, skinless)
  • 1 package of andouille sausage (this is absolutely the best one to use- I have tried subbing others and nothing else compares)
  • 1 can of diced tomatoes- in the summer I use 10 roma tomatoes
  • 1 green bell pepper
  • 1 medium purple onion (for the most flavor)
  • 1-2 tbsp. minced garlic or 2 cloves fresh
  • 1 tbsp. Crisco (can sub olive oil)
  • cajun seasoning
  • cayenne pepper
  • italian seasoning
  • fresh ground black pepper
  • salt (I use Kosher)
  • Franks Red Hot or Tabasco (it is easier to get out of hand with Tabasco, so I use Franks)
  • White or brown rice, or pasta of choice

Description

This Is My Husbands Favorite Dish. I Make It Very Hot, But It Can Be Modified To Taste. It Can Also Be Made Vegetarian, By Subbing Tofu For The Meat, But You May Lose A Little Without The Andouille Sausage. I Serve It Over Brown Rice, But It Can Be Eate
