Ingredients

  • 2lbs fresh smelt, whole or cleaned*
  • 2cups dry buttermilk baking mix(or equivalent home made)
  • 1 1/2-2 cups tonic or other unflavored carbonated water
  • 2t cayenne(or to taste)
  • 1T Old Bay Seasoning
  • dash of hot sauce
  • 2-3 cups panko bread crumbs(depending on how much of the smelt you are going to add this coating to :)
  • peanut or canola oil for frying

Description

Can You Tell A Boy Named This? ;) This Smelt Is Deep Fried After A Coating Of Old Bay Tempura Batter With Or Without A Panko Finish. Please Have Fresh Lemon Wedges For Serving Because A Sprinkle Of It Over The Fresh Fried Fish Makes All The Difference!
