- 2lbs fresh smelt, whole or cleaned*
- 2cups dry buttermilk baking mix(or equivalent home made)
- 1 1/2-2 cups tonic or other unflavored carbonated water
- 2t cayenne(or to taste)
- 1T Old Bay Seasoning
- dash of hot sauce
- 2-3 cups panko bread crumbs(depending on how much of the smelt you are going to add this coating to :)
- peanut or canola oil for frying
