Ingredients
- Easy to assemble, once you have made all the separate parts.
- 4 cups of cooked chicken (my standby - pick up a rotisserie, or use the meat havested from a multiple hen roast)
- 1 large onion chopped
- 1 green pepper chopped
- 2 tbsp of butter
- 3 cups of medium white sauce (6 tbsp/butter, 6 tbsp/flour, 3 c. milk)
- 1 1/2 tbsp curry powder
- 1 8 ounce box of mushroom caps, stems removed/caps broiled
- 5 cups of cooked rice
- avocado slices
- toasted almonds
- peach or mango chutney
- plumped raisins (soaked in sherry and heated)
- crumbled bacon
- chopped hard cooked eggs
- toasted coconut shreds
