Pasta Fagioli Soup Recipe

Ingredients

  • 2 pounds ground beef
  • 1 medium white onion, chopped
  • 1 large zucchini
  • 2 stalks celery, chopped
  • 2 garlic cloves, chopped
  • 1 14-ounce canned crushed tomatoes in puree - make sure it is tomatoes in puree (if not, you will not get the right consistancy & flavor)
  • 1 – 2 cans of white or cannellini beans (drain & rinse)
  • 1-2 bay leaves
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • ½ teaspoon fresh thyme
  • ¼ teaspoon fresh rosemary
  • 5 cups beef stock/broth or water (If you use water, make sure you salt it with beef bullion)
  • red chili flakes
  • 4 ounces small pasta
  • pepper to taste
