  • 8 oz mussels in shell

  • 2 med. onions diced
  • 1/2 cups celery diced
  • 1 cup carrots diced
  • 1 cup potatoes diced
  • 1 cup wild mushrooms sliced
  • 1 cup white drinking (not cooking) wine
  • 4 cups clam juice
  • 1 sprig fresh thyme
  • 2 tblsp chopped cilantro
  • salt and pepper
  • 1 cup heavy whipping cream
