- 1/4 cup unsalted butter
- 2 med. onions diced
- 1/2 cups celery diced
- 1 cup carrots diced
- 1 cup potatoes diced
- 1 cup wild mushrooms sliced
- 1 cup white drinking (not cooking) wine
- 4 cups clam juice
- 1 sprig fresh thyme
- 2 tblsp chopped cilantro
- salt and pepper
- 1 cup heavy whipping cream
