- 1/2 red onion diced
- 1/2 yellow bell pepper diced
- 1/2 red bell pepper diced
- 1/3 green bell pepper diced
- 2 med jalapenos seeded and diced
- 4 radishes thinly sliced
- 1/2 c apple cider vinegar
- 1/4 c. olive oil (or less to taste)
- juice of 2 limes
- fresh ground black pepper
- 2 tsp dried oregano
- 1/2 c. chopped cilantro
- 2 tsp toasted cumin seed
