Ingredients
- 2lbs pork tenderloins, sliced into 1 1/2 inch medallions
- 4T butter(or 2T each of butter and olive oil)
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 8oz fresh mushrooms, chopped
- 1lb fresh asparagus, trimmed and cut into about 1 inch pieces
- 1-2 cups chicken stock
- 1 cup heavy cream
- 2T Dijon or whole grain mustard
- 1/4 cup capers and 2t juice from the bottle
- kosher or sea salt and fresh ground black pepper
