Ingredients
- 20 oz package frozen cheese tortellini
- 1 package white button or crimini mushrooms, quartered or thickly sliced
- 2 red, yellow or orange bell peppers, cute into bite sized pieces
- 6 oz mozzarella, cubed small*
- 1/2 cup pepperoni slices, cut in half (or more if you prefer)
- 2 tblspn olive oil or butter, divided
- 7 oz container of pesto (I use store bought, but you could make your own)
- 1/3 to 1/2 cup mayo (I use Miracle Whip)
- *I have also used cubed Monterey Jack, crumbled feta & crumbled goat cheese in this salad, with delicious results every time.
