Loaded Baked Potato Soup Recipe

Ingredients

  • 2 tbsp butter
  • 4 - 12 oz. cans of 99% fat free chicken broth
  • 2 - 12 oz. cans evaporated skim milk
  • 5 lbs russet potatoes, peeled and cubed
  • 5 1/2 cups yellow or white onions, chopped
  • 8 - 10 slices of bacon, cooked and crumbled
  • 4 cloves garlic, finely chopped
  • 3 bay leaves (or 1 palm-full of dried bay leaves)
  • 1 tsp celery seed
  • 1 pint whipping cream
  • 1/3 cup fresh parsley, chopped
  • 1 - 1/2 cups sharp cheddar cheese, shredded
