- 4-5 lbs. beef brisket - be prepared for shrinkage
- 1 Tbsp. oil
- 3 cups hot water OR 2 cups hot water and 1 cup low sodium beef broth
- 1 cup orange juice
- 3 Tbsp. honey
- 3 Tbsp. dark brown sugar, packed
- 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1 - 2 garlic cloves, minced or 1 tsp. garlic powder
- 4 or 5 carrots, cut in 2 inch coins
- 3 sweet potatoes, peeled and cut into 2 inch chunks
- 1 butternut squash, peeled and cut into 2 inch chunks(optional)
- 14 - 16 pitted prunes
- 14 - 16 dried apricots
- cornstarch and cold water
