Ingredients
- ⢠About 4 cups of cooked pinto beans, plus 2 cups of bean juice, sub what you like. I used dried beans that I cooked a couple days ago but got about 4 cups of cooked. Canned will work but you may need to add water.
- ⢠1/4 lb mince meat, cooked. Sub what you like.
- ⢠4 slices smoked bacon, chopped & cooked.
- ⢠1/2 - 1 cup Portuguese sausage, chopped & cooked.
- ⢠1 med onion, chopped & cooked.
- ⢠3 or 5 plum tomatoes, chopped.
- ⢠1 stalk celery, chopped.
- ⢠1 tsp cumin.
- ⢠2 tsp paprika.
- ⢠1 Tbs chili powder.
- ⢠1 clove garlic, chopped fine or pressed.
- ⢠1 pint (2 cups or 500ml) chicken stock. I used a rich homemade but good store bought will do.
- ⢠1 tsp dried parsley or cilantro.
- ⢠1 Tbs olive oil, for the frying, optional.
- ⢠2 8â corn tortillas, cut into bits.
- ⢠1/2 cup cheddar cheese, sub what you like.
- ⢠cilantro, for the garnish.
- ⢠salt & FG pepper to taste.
