Ingredients
- 1 pound shrimp, peeled & deveined
- 1/2 fresh pineapple, peeled, cored, and chopped into bits (or 1 can pineapple tidbits in juice)
- 1 mango, peeled and chopped fine
- Either 3 jalapeños, or 1 anahiem, or 1 can diced green chilies. fresh peppers seeded and chopped fine
- 5 medium cloves garlic, crushed
- 1/2 medium sweet onion, cut into thin wedges
- 1/4 - 1/3 cup fresh squeezed lime juice
- 1 cup beer
- 2 T olive oil
- 8-12 leaves butter bibb lettuce, roughly torn
- Optional, but too good to pass up:
- 2 limes
- 2 small or 1 large avocado, sliced
- Enough lemon juice to lightly coat the avocado
- 1/2 cup sour cream (can use light)
- Flaked, unsweetened coconut
