Shrimp With Pineapple Mango Salsa Recipe

Ingredients

  • 1 pound shrimp, peeled & deveined
  • 1/2 fresh pineapple, peeled, cored, and chopped into bits (or 1 can pineapple tidbits in juice)
  • 1 mango, peeled and chopped fine
  • Either 3 jalapeños, or 1 anahiem, or 1 can diced green chilies. fresh peppers seeded and chopped fine
  • 5 medium cloves garlic, crushed
  • 1/2 medium sweet onion, cut into thin wedges
  • 1/4 - 1/3 cup fresh squeezed lime juice
  • 1 cup beer
  • 2 T olive oil
  • 8-12 leaves butter bibb lettuce, roughly torn
  • Optional, but too good to pass up:
  • 2 limes
  • 2 small or 1 large avocado, sliced
  • Enough lemon juice to lightly coat the avocado
  • 1/2 cup sour cream (can use light)
  • Flaked, unsweetened coconut

Description

Once You've Got The Salsa Together, This Is A Very Quick And Delicious Meal! Serve With Mexican Style Rice And A Green Salad. Prep Time Doesn't Include Time For Shrimp To Marinate.
