- 2 pie shells - pre-baked
- 4 slices Turkey Bacon, cooked
- 1 cup mixed minced onion, red bell pepper and poblano pepper
- 1/4 cup reserved shrimp boil water
- 5 eggs
- 1/2 cup evaporated milk
- 2 tbsp butter
- 2 tbsp Key Lime Curd (link to recipe below)
- 2 cup Swiss cheese, finely shredded

Shrimp In A Quiche Seems Like A Natural. When I Saw That Tub Of Key Lime Curd In The Refridgerator I Was Inspired To Make This Lemony Light Quiche.
