Ingredients
- 4 large tomatoes, cut into wedges, halved and seeded
- 2 cucumbers, cut lengthwise, then sliced thin
- 1 large red onion, peeled and sliced
- 1 large green pepper, chopped
- Dressing:
- 1/2 cup of olive oil
- 1/4 cup of cider vinegar
- 1 tbs. sugar
- 1/2 tsp. salt
- coarsely ground black pepper to taste
- Variations/Suggestions:
- Instead of making the dressing above, try 3/4-1 cup of your favorite Italian dressing.
- Chop crusty bread in the bite size pieces, mix in before serving.
