Chicken With Peanut Sauce And Pasta Nests Recipe

Ingredients

  • 2/3 cup chunky peanut butter
  • 1 1/2 cups coconut milk
  • 2 tablespoons soy sauce
  • 1/4 cup lemon juice
  • 2 teaspoons brown sugar, your choice
  • 4 cloves garlic, pressed
  • salt to taste
  • cayenne pepper to taste
  • 1/4 cup chicken stock
  • 1/4 cup whipping cream
  • 1 pound linguini
  • 2 tablespoons peanut oil
  • 6 scallions, chopped
  • 6 boneless chicken breasts, poached in white white for about 35 minutes
  • 1 pound snow peas, julienned, blanched and cooled in ice water.
  • Chopped, unsalted dry roast peanuts (garnish)
  • toasted sesame seeds (garnish)
  • coriander sprigs (garnish)
  • SAUCE:
  • 1/3 cup Coco Lopez
  • 1/2 to 3/4 cup hot water
