- 1 1/2 cups coconut milk
- 2 tablespoons soy sauce
- 1/4 cup lemon juice
- 2 teaspoons brown sugar, your choice
- 4 cloves garlic, pressed
- salt to taste
- cayenne pepper to taste
- 1/4 cup chicken stock
- 1/4 cup whipping cream
- 1 pound linguini
- 2 tablespoons peanut oil
- 6 scallions, chopped
- 6 boneless chicken breasts, poached in white white for about 35 minutes
- 1 pound snow peas, julienned, blanched and cooled in ice water.
- Chopped, unsalted dry roast peanuts (garnish)
- toasted sesame seeds (garnish)
- coriander sprigs (garnish)
- SAUCE:
- 1/3 cup Coco Lopez
- 1/2 to 3/4 cup hot water
