Dried Fruit And Bourbon Cake Recipe

Ingredients

  • 1 cup of prunes, cooked, cooled, pitted and mashed. (we stewed 'em in water with a cinnamon stick, a clove or two and a strip of lemon peel)
  • 2 cups flour
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 1 tsp of ground cloves
  • 1 tsp of allspice
  • 1 tsp of nutmeg, please use fresh ground, it makes all the difference
  • 1 tsp of cinnamon
  • 1/2 teaspoon of ginger
  • 2 cups of sugar
  • 3 eggs
  • 1 cup of vegetable oil
  • 1 tsp of vanilla or
  • 1/2 teaspoon of brandy extract
  • 1/2 cup of buttermilk
  • 1 cup chopped pecans
  • Glaze:
  • 1 cup of powdered sugar
  • 2 tbsp of bourbon
  • a little bit of lemon juice mixed with water to make the glaze thin enough to pour, no more than 2 tsp at best.

I Seem To Find A Lot Of Prune Recipes In G-Robert's And Momma's Recipe Files. I Guess We Just Regular Folks, Hmmm? To Be Politically Correct I Suppose You Could Call This A Dried Plum And Bourbon Cake. There, Feel Better?
