Ingredients
- 1 cup of prunes, cooked, cooled, pitted and mashed. (we stewed 'em in water with a cinnamon stick, a clove or two and a strip of lemon peel)
- 2 cups flour
- 1 tsp of baking soda
- 1/2 tsp of salt
- 1 tsp of ground cloves
- 1 tsp of allspice
- 1 tsp of nutmeg, please use fresh ground, it makes all the difference
- 1 tsp of cinnamon
- 1/2 teaspoon of ginger
- 2 cups of sugar
- 3 eggs
- 1 cup of vegetable oil
- 1 tsp of vanilla or
- 1/2 teaspoon of brandy extract
- 1/2 cup of buttermilk
- 1 cup chopped pecans
- Glaze:
- 1 cup of powdered sugar
- 2 tbsp of bourbon
- a little bit of lemon juice mixed with water to make the glaze thin enough to pour, no more than 2 tsp at best.
