Utica Chicken Riggies Recipe

Ingredients

  • 4 tablespoons butter
  • 2 1/2 lbs chicken breasts ( I usually use three to four chicken breasts)
  • 3 oz baby portabella mushrooms, sliced
  • 1 green pepper, chopped
  • 2 large garlic cloves, minced
  • 2 -3 cherry peppers, chopped. Add ½ - 1 oz of the juice also.
  • 1 red onion or 2 -3 shallots, chopped
  • 1 cup white wine
  • 2 tablespoons chicken stock
  • 1 1/2 cup vodka sauce
  • 1/2 pint heavy cream
  • 1 teaspoon smoked paprika
  • 1 teaspoon parsley
  • 1 teaspoon basil (finely chopped)
  • salt and black pepper
  • flour to thicken sauce if necessary (preference)
  • crushed red pepper flakes ( if you want it hot)
  • 1 lb rigatoni pasta, cooked and drained
