Ingredients
- 20 to 24 large cherry tomatoes (or Campari)
- 2 medium ripe avocados
- juice of 1 lime
- 1/4 c finely diced red onion
- 1 glove garlic, minced
- 2 Tbsp cilantro
- 1 jalapeno, seeded and minced (or 1/4 tsp jalapeno powder)
- 1/2 tsp cumin
- 1/4 cup chopped smoked almonds
- 2 tbsp pepitas (I used raw, but you can use slated/toasted)
- Pinch chipotle chili powder
- salt & pepper to taste
- Additional chopped cilantro, lime slices and pepitas for garnish
