Ingredients
- Place three tablespoons of butter in a double boiler.
- Add one cup of beer and mix it in well with the butter.
- When the beer is warm stir in one pound of finely cut sharp strong cheddar cheese.
- Stir constantly until the cheese is melted.
- Add 1/2 teaspoon paprika and 1/2 teaspoon dried mustard.
- Stir well.
- salt and pepper to taste.
- ~Serve on one inch squares of buttered toast.~
- ~As it has been written..Mary Cameron who lived near Glamorgan made the first Welsh rabbit in the 7th Century. The fame of it spread so that her name has been remembered.
- In those days as now the Welsh were great lovers of wild rabbit.When a hunter returned empty handed after promising his wife a fat rabbit for supper it was indeed a sorry state of affairs.
- So it happened one day to Arthur Cameron husband of Mary.She saw Arthur coming over the fields with nothing to show for his hunting.She quickly cut up some strong yellow cheese in a pot near the fire,added some bacon drippings and a pint of ale.
- When Arthur arrived home she served him this wonderful sauce on freshly toasted bread.
- This recipe was so good that it was not long before it was used all over England,Scotland and Ireland.
- The recipe was refined a bit as follows by the Tudor rulers but is basically Mary Cameron's recipe.~
