• 1 potato grated (do not peel)
• 2 celery stalks thinly sliced
• 2 carrots grated
• 1 red onion finely chopped
• 1 red bell pepper minced
• 1/2 cup roughly chopped mushrooms
• 1 sprig rosemary minced
• 1 sprig thyme minced
• 1/2 cup fresh Italian parsley chopped
• 2 cans diced tomatoes with basil (or stewed Italian)
• 1 can tomato paste
• 6 cups chicken stock
• ground basil to taste
• ground oregano to taste
• salt and pepper to taste
• several teaspoons minced garlic
• 1 pound chicken thighs poached (reserve liquid)
• italian seasoning
• salt and pepper
• 3 ounces cream cheese
• 1 cup heavy cream
• 1/2 cup grated Parmesan or Parmesan\Romano blend
• grated Parmesan

This Is A Knock Off Olive Garden's Seasonal Creamy Tomato Based Chicken And Vegetable Soup Which They Have Not Had On The Menu For Years (that I Am Aware Of). Very Yummy!
