- I am guessing the quantities i used to make this.
- 1 potato grated (do not peel)
- 2 celery stalks thinly sliced
- 2 carrots grated
- 1 red onion finely chopped
- 1 red bell pepper minced
- 1/2 cup roughly chopped mushrooms
- 1 sprig rosemary minced
- 1 sprig thyme minced
- 1/2 cup fresh Italian parsley chopped
- 2 cans diced tomatoes with basil (or stewed Italian)
- 1 can tomato paste
- 6 cups chicken stock
- ground basil to taste
- ground oregano to taste
- salt and pepper to taste
- several teaspoons minced garlic
- 1 pound chicken thighs poached (reserve liquid)
- italian seasoning
- salt and pepper
- 3 ounces cream cheese
- 1 cup heavy cream
- 1/2 cup grated Parmesan or Parmesan\Romano blend
- grated Parmesan
Description
This Is A Knock Off Olive Garden's Seasonal Creamy Tomato Based Chicken And Vegetable Soup Which They Have Not Had On The Menu For Years (that I Am Aware Of). Very Yummy!
