Ingredients
- 2 cups sugar
- 4 eggs (jumbo)
- 1 1/2 cups oil (I use canola)
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 3 small jars or containers of baby food carrots
- Frosting:
- Beat until smooth,
- 1/2 cup butter
- 8 ounce cream cheese
- 1/2 teaspoon real vanilla
- then add 1 1/2 to 2 cups of powdered sugar and mix til frosting is to your liking.
- Crushed walnuts (optional)

These Carrot Bars Have Almost A Cake Like Appearance, It Really Depends On What Size Pan You Want To Use. It Is Very Moist And The Cream Cheese Frosting Compliments It.
