Veggieturkey Sheperd's Pie Recipe

Ingredients

  • 1 & ½ lbs potatoes, russet or Yukon Gold, peeled & cubed small (to equal the size of the cauliflower florets; if I’m using Yukon Golds, I don’t peel them)
  • 1 head cauliflower* trimmed & cut into florets (that are close in size to your cubed potatoes)
  • 1 tablespoon butter
  • 2 tablespoons sour cream (or 2 tablespoons onion & chive flavored cream cheese)
  • ½ cup monterey jack cheese
  • ½ cup plus 2 tablespoons chicken stock, vegetable stock or milk
  • cooking spray
  • salt & pepper
  • 1 lb lean ground turkey (or ground beef, if you prefer)
  • 1 small onion, grated (or chopped)
  • 3 cloves garlic, grated or pressed
  • 1 or 2 carrots, finely grated
  • 2 cups frozen corn (or combination 1 cup frozen corn, 1 cup frozen peas)
  • fresh chopped chives (optional)

Description

Cooler Weather Makes Me Want To Break Out The Comfort Food! This Is A Riff On My Grandmother’s Simple & Delicious Version Of Sheperd’s Pie. No Modifications Were Necessary For Flavor, Most Certainly Not (!), I Just Made A Few Changes Give It
