Ingredients
- Salad
- 2 cups brown rice (or mix of brown, black and red rice)
- 1 cup frozen green peas-thawed or use edamame instead
- 1 green pepper, chopped fine
- 2 celery stalks, chopped fine
- 2 or 3 green onions, sliced thin
- 3 to 5 radishes, chopped fine
- ¼ cup raisins
- 1/3 cup walnuts, chopped
- ¼ cup crystallized (candied) ginger, chopped
- Dressing
- 1/4 cup soy sauce
- 6 Tbsp. rice vinegar
- 2 Tbsp. toasted sesame oil (I used the hot chili oil but regular is fine too)
- 1 Tbsp. fresh ginger, grated
- 1 tsp. brown sugar
- 2 cloves garlic, finely minced
Description
I Needed A Salad For A Pot Luck And My Painting Group Likes To Try New Flavour Combinations I Thought That I’d Experiment A Bit And This Is The End Result. It Tastes Good, It’s Good For You And It Looks Nice And Colourful Too.
