Ingredients

  • 8 oz. fresh spinach, washed, stems removed (8 cups)
  • 2-1/3 cups all-purpose flour
  • 2 large eggs, lightly beaten
  • 1/2 tsp. salt
  • 4 Tbsp. olive oil
  • 1 to 3 Tbsp. water
  • 1 tsp. green peppercorns, coarsely crushed (optional)
  • 8 oz. baby portobella mushrooms, coarsely chopped
  • 2-1/4 cup chicken broth
  • 1/4 cup torn fresh chervil or Italian flat-leaf parsley
