Shiitake "fried" Rice Recipe

Ingredients

  • 1 cup basmati rice (may use brown rice)
  • 1 tbsp vegetable oil
  • non-stick cooking spray
  • 2 large eggs, beaten
  • 3.5 oz. shiitake mushrooms, stems removed & sliced thin
  • 2 garlic cloves, minced or grated
  • crushed red pepper flakes to taste
  • salt & pepper to taste
  • 3 tbsp lime juice, freshly squeezed if possible
  • 2 tbsp soy sauce
  • 2 scallions, green & white parts sliced thin
