Ingredients

  • 1 large eggplant, cut lenghtwise into 1/2-inch-thick slices

  • 1/2 cup olive oil, divided
  • 2 russet potatoes, peeled, cut lenghtwise into 1/4-inch-thick slices
  • 2 large zucchini, cut lenghtwise into 1/4-inch-thick slices
  • 1 1/2 pounds ground beef or lamb
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chopped tomatoes
  • 1/2 cup dry red or white wine
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon each ground cinnamon and black pepper
  • 1 cup grated parmesan cheese, divided
  • 4 tablespoon butter or margarine, divided
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon ground nutmeg
  • 2 cups milk
